One of the things that amazes me most about North Carolina is that our weather can go from 40 degrees to 80 in a matter of 24 hours! Just today I looked down at my thermometer and read a gorgeous sunny 79 degrees outside, which means the North Carolina summer is on its way! Suddenly my urge to clean up patio, fire up the grill and invite my friends over comes to mind...which brings us to our food for thought today, watermelon!
I know what you're thinking, this fruit holds a high sugar content! And while you are correct that it is mostly made of natural sugars and water, (92% water, to be exact), health specialists have found over the recent years that the watermelon has many health benefits! it dates back to the 1600's and is actually recognized as a vegetable, as well as a fruit! Watermelon not only boosts your immune system, but it also is packed full of Vitamin A, which is great for your eyes. It also reduces white blood cells, which can prevent the fight of infection. Vitamin B6 is also found in watermelon, which helps you produce antibodies to fight illnesses and also assists you in breaking down proteins. Vitamin C and potassium are two other essential vitamins found in watermelon, which can help you protect your body and also avoid muscle cramps.
Watermelon is the most consumed fruit out of all of the melon family. It grows on the vine and is a truly pure fruit. Needing only sunshine, water and the pollination of bees to grow, this fruit is amazingly organic. These big fruits take only 3 months to grow after the vine first appears.
If you're thinking of adding a little fresh (and sweet) watermelon to your next meal, try the below Whole Foods recipe, which is a summer must-have for your non-alcholic drink list! 10 ounces of organic lemon juice
6 cups water
3/4 cup cane sugar (reduce this if your watermelon is super sweet in taste)
mint springs (for garnish)
Simply puree your watermelon, add your lemon juice and sugar, mix remaining ingredients & serve!!
